Altınkılıç Süt ürünleri kurucusu Mehmet Altınkılıç 1957 yılında Anadolu’dan İstanbul’a gelir. İstanbul piyasasında peynir üretimiyle özdeşleşen yaşamı, 1976 yılında kendi işini kurmasıyla önemli ölçüde değişir. Unkapanı’nda 20m² de başlayan toptancılığı hızla gelişir. Ezine başta olmak üzere Trakya ve Balıkesir yörelerinin seçkin beyaz peynirlerini piyasaya sunar. 1991 yılında markalaşma anlayışıyla, Altınkılıç Gıda ve Süt San. Tic A.Ş. kurulur. Türkiye’nin en mümbit topraklarından Ezine’de toplam 20000 m2 arsalı 6000 m2 kapalı alanda başlayan üretim Altınkılıç ürünlerinin temelini oluşturur. Ezine Peyniri, Klasik Peynir, Koyun Peyniri, İzmir Tulumu gibi ürünlerin başarısı neticesinde, katma değerli mamullerle ürün gamını genişletme kararı alınır.Türkiye’nin en kaliteli Eski Kaşar’ını üretme şiarıyla, iklim koşulları ve üretim şartları araştırmaları yapılır. 1996 Yılında yapılan araştırmalarla Balıkesir Karaağaç bölgesinde 4800 m2 alanda 3000m2’si kapalı Eski Kaşar Üretim Tesisi de faaliyete alınır. 2001 yılında Türkiye’de gelişen perakende sektörü ile birlikte çağı yakalamayı hedefleyen Altınkılıç, başta Ege Üniversitesi olmak üzere Türkiye’nin başat üniversiteleriyle ortak çalışmalar yaparak, nütritif süt ürünlerine yönelir.
